Arancini Siciliani (Sicilian Rice Balls)

Ingredients:

  • Arborio rice
  • Beef or vegetable broth
  • Grated Parmesan cheese
  • Mozzarella, diced
  • Ground meat (beef or pork)
  • Tomato sauce
  • Onion, finely chopped
  • Bread crumbs
  • Eggs
  • Olive oil for frying

Instructions:

  1. Cook Arborio rice in beef or vegetable broth until al dente.
  2. In a separate pan, sauté finely chopped onions, add ground meat, and cook until browned. Mix in tomato sauce and simmer.
  3. Combine cooked rice, grated Parmesan, and a beaten egg. Allow it to cool.
  4. Take a handful of the rice mixture, flatten it, place a piece of diced mozzarella in the center, and form a ball.
  5. Dip each ball in beaten egg, roll in breadcrumbs, and deep fry until golden brown.
  6. Serve hot with additional tomato sauce for dipping.
